Ingredients

  • 2 (3 oz) packages of red gelatin (cherry or strawberry)
  • 2 cups boiling water
  • 1 cup cold water
  • 1/2 cup sweetened condensed milk
  • 1 (1/4 oz) envelope unflavored gelatin
  • 1/2 cup cold water (for white layer)
  • 1/2 cup boiling water (for white layer)
  • Leg lamp gelatin mold (available online)
  • Non-stick cooking spray

Instructions

  1. Prepare Your Mold and Ingredients: Lightly spray your leg lamp gelatin mold with non-stick cooking spray. Gather all your ingredients for both the red and white layers.
  2. Make the Red Gelatin Layer: Dissolve the red gelatin packages in 2 cups of boiling water, stirring until completely dissolved. Add 1 cup of cold water and stir. Let cool slightly before pouring into your prepared leg lamp mold. Refrigerate for about 1 hour until set but not firm.
  3. Create the White ‘Lampshade’ Layer: Prepare the white layer by dissolving unflavored gelatin in water, then adding sweetened condensed milk. Let cool to room temperature. When the red layer has set partially, carefully pour the white mixture into the ‘shade’ portion of the mold.
  4. Chill and Unmold: Refrigerate the gelatin dessert for at least 4 hours, preferably overnight. To unmold, dip the mold briefly in warm water, then invert onto a serving plate.

Notes

  • For a more opaque white layer, add a few drops of white food coloring
  • If you can’t find a leg lamp mold, you can use a regular gelatin mold and decorate it to resemble the lamp
  • Make sure both gelatin mixtures have cooled before combining layers to prevent melting
  • For extra stability, you can use 1.5 envelopes of unflavored gelatin in the white layer
