- 2 lbs beef stew meat, cubed
- 3 carrots, chopped
- 3 parsnips, chopped
- 2 potatoes, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat and brown the beef cubes until seared on all sides.
- Add diced onion and garlic, sauté until fragrant.
- Pour in beef broth, add tomato paste, thyme, rosemary, salt, and pepper.
- Add carrots, parsnips, and potatoes.
- Bring to a boil, then simmer on low for 1.5 to 2 hours until meat is tender and flavors meld.
Notes
- For richer flavor, use bone-in beef or add a splash of red wine before simmering.
- Serve with crusty bread to soak up the broth.
