- 2 lbs lamb or chicken, cut into chunks
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 1 cup chopped fresh parsley
- 1/2 cup lemon juice
- Assorted vegetables (eggplant, zucchini, peppers)
- Rosewater or saffron for aroma
Instructions
- Preheat oven to 400°F (200°C).
- Marinate meat with olive oil, spices, lemon juice, salt, and pepper for at least 2 hours.
- Arrange marinated meat and vegetables on a baking tray.
- Roast for 25-30 minutes until tender and golden.
- Garnish with chopped parsley and a drizzle of rosewater or saffron water before serving.

- Use bone-in meats for added flavor.
- Serve with warm flatbreads and yogurt sauce.
