Ingredients

- 2 cups water
- 2 tablespoons agar agar powder
- 1/4 cup granulated sugar (or maple syrup for vegan)
- 1 teaspoon lemon juice
- 1/2 cup fresh or frozen berries (for pink layer)
- 1/4 teaspoon activated charcoal (optional, for purple layer)
- Edible glitter (food-grade, for shimmer)
Instructions
- Divide water into two parts: 1 cup for pink layer, 1 cup for purple layer.
- For pink layer: Simmer berries in 1 cup water 10 mins. Strain, discard solids. Add 1 tbsp agar agar and 1 tbsp sugar. Stir until dissolved. Pour into mold and refrigerate until set (~20 mins).
- For purple layer: Heat remaining 1 cup water with 1 tbsp agar agar and 1 tbsp sugar. Add lemon juice and optional activated charcoal for depth. Pour over set pink layer. Refrigerate until fully set (~45 mins).
- Unmold and cut into 1-inch cubes. Toss lightly in edible glitter before serving.
Notes
- For vegan version, use agar agar powder (not flakes) and maple syrup or agave.
- Cubes keep refrigerated up to 5 days, but lose shine over time—add fresh glitter before serving.
- Can add food coloring for brighter contrast, but berries and charcoal give natural hues.
