Instructions
- Preheat oven to 450°F (232°C).
- Rub the roast with olive oil, garlic, salt, pepper, rosemary, and thyme.
- Place in a roasting pan and roast at 450°F for 20 minutes.
- Reduce temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours or until internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from oven, cover with foil, and let rest for 20 minutes before slicing.
