- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Yellow and gold food coloring (gel preferred)
- Gold edible sparkle dust (for shimmer)
- Gold coin-shaped chocolate candies or gold-wrapped chocolates for decoration
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the softened butter and sugar until creamy. Mix in the egg and vanilla extract until well combined.
- Add a few drops of yellow and gold gel food coloring to the dough, mixing until your desired vibrant hue is achieved.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Divide the dough and roll it out to about 1/4 inch thick on a lightly floured surface.
- Use a round cookie cutter to cut out circles resembling coins.
- Place each cookie onto the prepared baking sheet and bake for 10-12 minutes or until edges are golden.
- Remove from oven and let cool completely on a wire rack.
- Once cooled, lightly brush the cookies with edible gold dust or spray with gold edible spray paint for a luxe finish.
- Place a gold chocolate coin or wrapped gold chocolate in the center of each cookie to resemble a treasure coin.

- Store in an airtight container at room temperature for up to 3 days.
- For longer freshness, refrigerate in a covered container for up to a week, layering with parchment paper to prevent sticking.
- Enhance the cookies with edible gold leaf for an even more authentic treasure look.
