- 2 pounds beef stew meat, cut into chunks
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add beef chunks and brown on all sides, then remove and set aside.
- In the same pot, sauté onions and garlic until translucent.
- Add tomato paste, thyme, salt, and pepper; cook for 2 minutes.
- Return beef to the pot, add carrots, potatoes, and beef broth. Bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until meat is tender and flavors meld.
- Garnish with fresh parsley before serving.

- You can thicken the stew with a cornstarch slurry if desired.
