- 1 pound dried red kidney beans
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon thyme
- 2 bay leaves
- 1 pound smoked sausage, sliced
- 4 cups chicken broth
- 2 cups long-grain white rice
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Rinse the beans and soak in water overnight.
- In a large pot, heat olive oil and sauté onions, bell pepper, and garlic until fragrant.
- Add sliced sausage and cook until browned.
- Drain and add soaked beans, chicken broth, spices, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beans are tender.
- Meanwhile, cook rice according to package instructions.
- Remove bay leaves, season with salt and pepper, and serve over rice garnished with green onions.
Notes
- Soaking beans reduces cooking time and improves digestibility.
- You can substitute the smoked sausage with ham or omit for vegetarian version.
