Instructions
- In a mixing bowl, combine shredded coconut, coconut cream, powdered sugar, agave syrup, spirulina, and matcha (if using). Mix until a damp, moldable dough forms.
- Chill the mixture in the fridge for 20 minutes to firm up.
- Scoop chilled dough into 1-inch balls and roll gently between palms. If too sticky, lightly oil hands.
- Roll each truffle in toasted coconut flakes for texture.
- Place on a parchment-lined tray and chill again for 30 minutes to set.
- Dust lightly with edible shimmer dust using a small brush for a bioluminescent glow.
- Serve chilled or at room temperature. Store in fridge for up to 5 days.
