Ingredients
- 1 large head of green cabbage
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 tbsp tomato paste
- 1 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh dill or parsley for garnish
Instructions
- Bring a large pot of water to a boil. Carefully core the cabbage and peel off the leaves. Blanch the leaves in boiling water for 2-3 minutes until tender, then drain and set aside.
- Pat dry the cabbage leaves and trim thick veins for easier rolling.
- Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent.
- Add ground meat and cook until browned. Stir in cooked rice, diced tomatoes, tomato paste, paprika, salt, and pepper. Simmer for 5 minutes.
- Place a cabbage leaf flat, add 2-3 tablespoons of filling, then roll tightly, tucking in the sides.
- Repeat with remaining leaves and filling.
- Arrange the rolls seam-side down in the slow cooker. Pour water or tomato sauce over them, cover, and cook on low for 6-8 hours until tender.
Notes
- Use lean ground meat for a healthier version.
- Blanching the cabbage leaves makes rolling easier.
- You can substitute rice with quinoa or cauliflower rice for a low-carb option.
