Perfect for meal prep or a quick weeknight meal, these cabbage rolls will turn your dinner into an adventure in flavor.

  • Total Time: 6 hours 20 minutes to 8 hours 20 minutes
  • Yield: 4-6 servings

Ingredients

Scale
  • 1 large head of green cabbage
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh dill or parsley for garnish

Instructions

  1. Bring a large pot of water to a boil. Carefully core the cabbage and peel off the leaves. Blanch the leaves in boiling water for 2-3 minutes until tender, then drain and set aside.
  2. Pat dry the cabbage leaves and trim thick veins for easier rolling.
  3. Heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent.
  4. Add ground meat and cook until browned. Stir in cooked rice, diced tomatoes, tomato paste, paprika, salt, and pepper. Simmer for 5 minutes.
  5. Place a cabbage leaf flat, add 2-3 tablespoons of filling, then roll tightly, tucking in the sides.
  6. Repeat with remaining leaves and filling.
  7. Arrange the rolls seam-side down in the slow cooker. Pour water or tomato sauce over them, cover, and cook on low for 6-8 hours until tender.

Notes

  • Use lean ground meat for a healthier version.
  • Blanching the cabbage leaves makes rolling easier.
  • You can substitute rice with quinoa or cauliflower rice for a low-carb option.
