Ingredients
Scale
- 8 soft taco shells
- 2 cups of Captain Crunch cereal, crushed for crunchiness
- 1 lb ground beef or plant-based meat substitute
- 1/2 cup diced red onion
- 1/2 cup diced bell peppers (red, green, yellow)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sliced jalapeños (optional for heat)
- 1/2 cup fresh chopped cilantro
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup hot sauce (for flair)
- 1 tbsp olive oil
- Seasonings: salt, pepper, cumin, paprika
Instructions
- Heat the olive oil in a skillet over medium heat. Add the diced red onion and bell peppers, sautéing until tender and fragrant.
- Add the ground beef or plant-based meat, seasoning with salt, pepper, cumin, and paprika. Cook until browned and cooked through. For an extra superhero touch, season with a dash of hot sauce during cooking.
- In a separate bowl, crush the Captain Crunch cereal until you reach a crunchy, breadcrumb-like consistency.
- Warm the taco shells in the oven or microwave as directed.
- Assemble the tacos by filling each shell with the cooked meat mixture, then topping with shredded cheese, crushed Captain Crunch, sliced jalapeños, and a dollop of sour cream or Greek yogurt.
- Sprinkle fresh cilantro over the top and add an extra splash of hot sauce if desired for a fiery finish.
Notes
- For a more colorful and flavorful experience, consider adding diced tomatoes or avocado slices.
- Crushed Captain Crunch can be stored and used as a crunchy topping for salads or desserts later.
