Instructions
- Start by patting the lamb chops dry with paper towels. In a small bowl, combine the minced garlic, olive oil, smoked paprika, cayenne pepper, salt, and black pepper.
- Rub the marinade evenly onto both sides of each lamb chop. Place in a dish, add fresh rosemary and thyme, then cover and refrigerate for at least 30 minutes (preferably 2 hours for deep flavor).
- Preheat your grill or cast-iron skillet over medium-high heat until hot.
- Add the lamb chaps, cooking for about 3-4 minutes per side for medium-rare, or adjust according to your preferred doneness.

- Remove from heat and let rest for 5 minutes before serving to lock in juices.
