- 1 cup fresh dragonfruit pulp (peeled and diced)
- 1/2 cup agave nectar or maple syrup
- 2 tsp agar-agar powder
- 1/4 tsp pink salt (optional)
- Pink food-grade glitter (optional, for shimmer)
- Pink silicone gummy bear mold
Instructions
- Blend dragonfruit pulp until smooth in a blender or food processor.
- Pour puree into a small saucepan with agave and agar-agar; whisk well.
- Bring mixture to a gentle simmer over medium heat, stirring constantly for 3β4 minutes until agar dissolves completely.
- Remove from heat and stir in pink salt and glitter (if using).
- Pour mixture into silicone gummy bear molds, filling each cavity about 3/4 full.
- Refrigerate for 20β25 minutes until set.
- Unmold and store in an airtight container in the fridge for up to 1 week.
Notes
- For sharper flavor, add a squeeze of lime juice before pouring into molds.
- Agar-agar sets faster than gelatin β work quickly after heating.
- To make gluten-free & refined sugar-free β use certified organic maple syrup.
