Instructions
Prepare the crust
In a mixing bowl, combine the flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add the egg yolk and a tablespoon of ice water if needed to bring the dough together. Wrap in plastic wrap and refrigerate for 30 minutes.
Bake the crust
Preheat your oven to 375°F (190°C). Roll out the chilled dough and fit it into tart pans. Dock the bottoms with a fork, then bake for about 15–18 minutes or until golden brown.
Make the lemon filling
Whisk together the lemon juice, lemon zest, sugar, eggs, heavy cream, and cornstarch until smooth. Pour the mixture into the pre-baked tart shells.
Bake the filled tarts
Bake at 350°F (175°C) for 20–25 minutes, or until the filling is set. Let the tarts cool completely.
Decorate with Bat Signal
Use dark chocolate or edible gel to carefully draw the Bat Signal onto each tart, mimicking Batman’s iconic emblem. For a professional look, utilize silicone molds or edible stencils.
