- 200g graham crackers, crushed
- 100g unsalted butter, melted
- 600g cream cheese, softened
- 150g sugar

- 125ml fresh lime juice
- Zest of 2 limes
- 200ml sour cream
Instructions
- Combine crushed graham crackers and melted butter, press into the base of a springform pan.
- Preheat oven to 160°C (320°F). Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in lime juice and zest.
- Pour filling over crust and bake for 50 minutes until set.
- Cool and refrigerate for at least 4 hours. Top with sour cream, lime slices, and mint before serving.

- For a tangier flavor, add more lime zest or juice.
- Keep refrigerated and consume within 3 days for best freshness.
