Instructions
- Preheat oven to 350°F (175°C). Sift together flour and powdered sugar for crust.
- Add softened butter to flour mixture and work in until mixture resembles coarse crumbs.
- Press dough evenly into an 8×8-inch baking pan lined with parchment paper. Bake for 15-18 minutes until edges are lightly golden.
- While crust bakes, whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
- Pour lemon filling over hot crust and return to oven for 20-25 minutes until filling is set.
- Cool completely in pan before cutting into squares. Dust with powdered sugar before serving.
