Ingredients
Scale
- 1 cup (120g) all-purpose flour
- 1/2 cup (115g) unsalted butter, cold and cubed
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) fresh lemon juice
- 2 tablespoons lemon zest
- 3 tablespoons cornstarch
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Mix flour, sugar, and salt. Cut in cold, cubed butter until coarse crumbs form. Press into a parchment-lined baking pan. Bake for 15-20 minutes until lightly golden.
- Whisk eggs, sugar, lemon juice, lemon zest, and cornstarch until smooth. Pour over baked crust.
- Bake for an additional 20-25 minutes until set and slightly firm around edges. Cool completely in the pan.
- Dust cooled lemon bars with powdered sugar. Serve on vintage plates, garnished with mint or edible flowers for a Hollywood touch.
Notes
- Ensure the butter remains cold for a flaky crust.
- Use fresh lemon juice and zest for authentic citrus flavor.
- Avoid overbaking the filling to keep it tender and slightly jiggly.
- For extra glamour, sprinkle edible glitter or gold flakes on top.
