- 2 cups granulated sugar
- ¾ cup light corn syrup
- ½ cup water
- Blue food coloring

Instructions
- In a medium saucepan, combine the sugar, corn syrup, and water. Stir well to ensure the sugar is dissolved. Attach a candy thermometer to the side of the pan, ensuring it doesn’t touch the bottom.
- Heat the mixture over medium heat, without stirring, until it reaches the hard crack stage (300-310°F or 149-154°C) on the candy thermometer. This will take about 15-20 minutes.
- Remove the saucepan from the heat. Quickly add the blue food coloring and any flavoring extracts you’re using. Stir well until the color is evenly distributed, being careful as the mixture is extremely hot.
- Pour the hot candy mixture onto the prepared baking sheet, spreading it out evenly. Let it cool completely at room temperature, which may take about 30-60 minutes.

- Use a candy thermometer for accuracy in achieving the correct hard crack stage.
- Do not stir while cooking to prevent the sugar from crystallizing.
- Work quickly to add color and pour the mixture before it cools.
