Ingredients

- 2 cups granulated sugar
- 3/4 cup water
- 1/4 teaspoon cream of tartar
- 3-4 drops blue food coloring (gel or liquid)
- Pinch of cream of tartar (for coating sticks)
- 2 wooden skewers or candy sticks
Instructions
- Boil water, sugar, and cream of tartar in a saucepan over medium-high heat, stirring until sugar dissolves.
- Once boiling, stop stirring and let simmer for 5 minutes until mixture reaches 230°F (soft-ball stage).
- Remove from heat and stir in food coloring until evenly blue.
- Pour hot syrup into a clean, heatproof jar.
- Dip skewers in water, then roll loosely in granulated sugar to seed crystals. Let dry overnight.
- Hang skewers in the jar so they don’t touch sides or bottom.
- Cover jar loosely with paper towel and let sit undisturbed for 5–7 days in a cool, dry place.
- Once crystals form, remove skewers, let dry on parchment, then enjoy!
Notes
- For brighter color, use gel food coloring—Liquid may dilute syrup.
- Do not stir once boiling begins—this prevents premature crystallization.
- For ‘Heisenberg’ style contrast, try layering a small batch with a touch of red coloring to mimic the subtle marbling from the show.
