- 2 lbs frozen French fries
- 1 lb ground beef
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (optional)
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can diced tomatoes, undrained
- 1 (6 oz) can tomato paste
- 2 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- 4 cups shredded cheddar cheese
- Optional toppings: sour cream, jalapenos, green onions
Instructions
- Preheat your oven or deep fryer according to fries package instructions or to 350ยฐF (175ยฐC). Bake or fry the fries until golden brown and crispy. Season with salt and set aside.
- In a large skillet or saucepan, brown the ground beef over medium-high heat, then drain excess grease. Add chopped onion and garlic (and bell pepper, if using) and cook until softened, about 5-7 minutes.
- Stir in kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, and cayenne pepper (if using). Season with salt and pepper. Simmer for at least 30 minutes, stirring occasionally.
- Arrange the fries on a platter, spoon chili over them, and sprinkle with cheddar cheese. Optionally, broil for a few minutes to melt the cheese. Top with sour cream, jalapenos, and green onions, if desired. Serve immediately.
Notes
- Crispy Fries: Soak fries in cold water for 30 minutes before cooking to remove excess starch.
- Cheese Selection: Use cheddar cheese or experiment with other cheeses like Monterey Jack.
- Spice Level: Adjust chili powder and cayenne pepper to suit your taste.
