  • 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 jalapeño, seeded and minced (optional)
  • 1 packet Los Pollos Chicken secret spice blend
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Lime wedges, for serving
  • Fresh cilantro, chopped for garnish
  • Tortillas, warm, for serving

Instructions

  1. In a large bowl, mix chicken with olive oil, spice blend, smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper. Marinate for at least 30 minutes.
  2. Heat a large skillet over medium-high heat, and cook marinated chicken until browned, about 6-8 minutes. Set aside.
  3. In the same skillet, add onion and cook until soft. Add garlic, bell peppers, and jalapeño (if using) and cook until tender-crisp.
  4. Return cooked chicken to skillet, stir to combine, and heat through for an additional 2-3 minutes. Adjust seasoning as needed.
  5. Serve hot with warm tortillas, lime wedges, and fresh cilantro.
