- 2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 jalapeño, seeded and minced (optional)
- 1 packet Los Pollos Chicken secret spice blend
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper (optional)
- Salt and pepper to taste
- Lime wedges, for serving
- Fresh cilantro, chopped for garnish
- Tortillas, warm, for serving
Instructions
- In a large bowl, mix chicken with olive oil, spice blend, smoked paprika, cumin, chili powder, cayenne pepper, salt, and pepper. Marinate for at least 30 minutes.
- Heat a large skillet over medium-high heat, and cook marinated chicken until browned, about 6-8 minutes. Set aside.
- In the same skillet, add onion and cook until soft. Add garlic, bell peppers, and jalapeño (if using) and cook until tender-crisp.
- Return cooked chicken to skillet, stir to combine, and heat through for an additional 2-3 minutes. Adjust seasoning as needed.
- Serve hot with warm tortillas, lime wedges, and fresh cilantro.
