Instructions
- Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Whip the egg whites in a clean, dry bowl using a stand mixer or hand whisk. Add cream of tartar and beat until soft peaks form.
- Gradually add sugar, one tablespoon at a time, while continuing to beat. Once all sugar is incorporated, beat until stiff, glossy peaks form. Add vanilla and almond extracts for flavor.
- Add food coloring if desired, and gently fold to create a marbled or solid color effect.
- Pipe the meringue into small kiss shapes on the prepared baking sheet using a piping bag fitted with a star tip or a plastic bag with the corner cut off.
- Bake for 1 to 1.5 hours, or until the meringue kisses are firm and easily lift off the baking sheet. Turn off the oven and let them cool completely inside.
