Ingredients
Scale
- 2 cups of plain yogurt
- 1 cup of fresh lily petals (or edible flowers like jasmine or roses)
- 1/2 cup of honey or to taste
- 1/2 teaspoon of cardamom powder
- 1/2 teaspoon of rose water
- 1/2 cup of chilled milk
- Ice cubes (as needed)
- Optional garnishes: edible flowers, mint leaves, or a sprinkle of pistachios
Instructions
- Prepare the flower infusion: In a blender, combine the lily petals with a little milk and blend until finely chopped, releasing their delicate aroma.
- Mix the main ingredients: Add the yogurt, honey, cardamom powder, rose water, remaining milk, and ice cubes into the blender.
- Blend until smooth: Process the mixture until it becomes creamy and well combined. For an extra silky texture, strain the lassi through a fine sieve.
- Serve: Pour the Lily Lassi into tall glasses, garnish with edible flowers or a sprig of mint, and serve immediately for the best flavor.
Notes
- Use fresh edible flowers for the best flavor and aroma.
- If making ahead, add ice just before serving to maintain freshness.
- For vegan version, replace yogurt with plant-based options like coconut or almond yogurt.
