Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the softened butter and sugar until creamy. Add the egg and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, mixing until a smooth dough forms.
- Divide the dough in half, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll out the chilled dough to about 1/4 inch thickness.
- Use a hat-shaped cookie cutter or a custom template to cut out the hat shapes.
- Place the cut-outs onto the prepared baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely on a wire rack.
