Instructions
- Preheat oven to 350°F (175°C). Line a 9-inch square baking pan with parchment paper.
- In a mixing bowl, combine flour, powdered sugar, and salt. Add cold, cubed butter and mix until coarse crumbs form.
- Press the dough evenly into the prepared baking pan. Bake for 20 minutes until lightly golden.
- Whisk together eggs, granulated sugar, flour, lemon juice, and lemon zest until smooth.
- Pour lemon mixture over baked crust. Return to oven and bake for an additional 20-25 minutes until set.
- Cool completely. Dust with powdered sugar, then cut into squares. Serve chilled or at room temperature.
