Ingredients
Scale
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup granulated sugar
- 1 large egg yolk
- 2-3 tablespoons cold water
- Pinch of salt
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- 1 cup peach slices or apricots
- 1/4 cup apricot jam (for glazing)
- Fresh mint leaves for garnish
- Almond slices or crushed nuts (optional)
- Vanilla custard or pastry cream (optional)
Instructions
- In a food processor, combine the flour, sugar, salt, and chilled butter. Pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water gradually; pulse until the dough begins to come together.
- Turn the dough onto a lightly floured surface and knead briefly. Form into a disk, wrap with plastic wrap, and chill for 30 minutes.
- Preheat your oven to 350°F (175°C). Roll out the chilled dough on a floured surface until about 1/8 inch thick.
- Fit the dough into a tart pan, trimming any excess. Prick the bottom with a fork and bake for 20-25 minutes until golden.
- Allow the crust to cool completely before filling.
- Arrange the sliced fruits beautifully on the cooled tart shell. Create floral or geometric patterns for an elegant presentation.
- Warm the apricot jam and brush it over the fruit to give it a shiny, flawless appearance.
- Decorate with fresh mint leaves and optional nuts for added texture.
Notes
- Ensure the tart crust is well-chilled before baking for maximum flakiness.
- Use fresh, high-quality fruit for vibrant colors and flavors.
- Glazing the fruit preserves freshness and gives a professional shine.
- Prepare the crust a day in advance for convenience.
