- 6-8 medium-sized tart apples (such as Granny Smith or Fuji)
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 package of pre-made or homemade pie crusts (or enough to make a double crust)
- 1 Egg (for egg wash)
- Sugar crystals or cinnamon sugar for topping (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Peel, core, and slice the apples into thin, even pieces. Toss them in lemon juice to prevent browning.
- In a large bowl, combine the sliced apples with sugar, flour, cinnamon, nutmeg, salt, and vanilla extract. Mix thoroughly to coat all slices evenly.
- Roll out one pie crust and fit it into a 9-inch pie dish. Fill with the apple mixture, spreading it evenly.
- Cover with the second crust, seal the edges, and cut small slits on top to allow steam to escape.
- Brush the top crust with beaten egg for a shiny finish. Optional: sprinkle with sugar crystals or cinnamon sugar for extra sweetness.
- Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
- Allow the pie to cool for at least 2 hours before serving to let the filling set properly.

- For best results, use cold butter in the crust to achieve a flaky texture.
- Ensure apples are evenly sliced for uniform baking.
- Chill the pie before serving to enhance flavors and preserve shape.
