  • 3 ripe bananas, mashed
  • 1 cup grated carrots
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1/3 cup melted coconut oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, eggs, honey, and coconut oil until well combined.
  3. In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Fold in grated carrots.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted comes out clean.
  7. Allow to cool before slicing and serving.
