- 2 large yellow or sweet onions, sliced into 1/2-inch rings
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 cup cold beer (lager or IPA)
- Vegetable oil for frying
- Coarse sea salt, for garnish
- Fresh parsley, chopped (optional)
Instructions
- Fill a deep pot with 2–3 inches of vegetable oil and heat to 365°F (185°C).
- Whisk flour, baking powder, salt, pepper, garlic powder, and paprika in a large bowl.
- Slowly whisk in cold beer until batter is smooth and thick—like pancake batter. Let rest 10 minutes.
- Dip onion rings into batter one at a time, letting excess drip off.
- Fry 2–3 at a time for 2–3 minutes until deep golden brown. Drain on a wire rack or paper towel-lined plate.
- Season immediately with coarse sea salt. Serve warm with dipping sauces.

- For extra crunch, double-dip rings: batter once, let drip, dip again briefly before frying.
- Use cold batter and hot oil to prevent soggy rings.
