- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, chilled and cubed
- ¼ cup granulated sugar
- 1 egg yolk
- 1–2 tablespoons cold water
- 2 cups assorted fresh fruits (strawberries, blueberries, raspberries)
- ½ cup fruit jam (your choice)
- Powdered sugar for dusting
Instructions
- Gather all of your ingredients in a bright and organized kitchen.
- In a mixing bowl, combine the flour, sugar, and chilled butter until it resembles coarse crumbs. Add the egg yolk and enough cold water to form a soft dough. Wrap in plastic and refrigerate for at least 30 minutes.
- Roll out the chilled dough to about 1/8 inch thickness, cut circles and press into a tart pan. Prick the bottoms and bake at 375°F (190°C) for 15-20 minutes until golden brown.
- Combine fresh fruits and fruit jam in a saucepan over medium heat, cooking until the fruits are soft and syrupy. Once the crusts cool, spoon the mixture into each tart shell.
Notes
- Store tarts in an airtight container in the refrigerator for up to 3 days, or freeze empty tart shells for longer storage.
- Serve warm or chilled, dusted with powdered sugar or with a scoop of ice cream.
- Use a mix of fruits that offer sweetness and tartness for the best flavor.
