Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup granulated sugar
  • 1 egg yolk
  • 12 tablespoons cold water
  • 2 cups assorted fresh fruits (strawberries, blueberries, raspberries)
  • ½ cup fruit jam (your choice)
  • Powdered sugar for dusting

Instructions

  1. Gather all of your ingredients in a bright and organized kitchen.
  2. In a mixing bowl, combine the flour, sugar, and chilled butter until it resembles coarse crumbs. Add the egg yolk and enough cold water to form a soft dough. Wrap in plastic and refrigerate for at least 30 minutes.
  3. Roll out the chilled dough to about 1/8 inch thickness, cut circles and press into a tart pan. Prick the bottoms and bake at 375°F (190°C) for 15-20 minutes until golden brown.
  4. Combine fresh fruits and fruit jam in a saucepan over medium heat, cooking until the fruits are soft and syrupy. Once the crusts cool, spoon the mixture into each tart shell.

Notes

  • Store tarts in an airtight container in the refrigerator for up to 3 days, or freeze empty tart shells for longer storage.
