- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) packed light brown sugar
- 1/2 cup (100g) granulated sugar
- 2 tsp pure vanilla extract
- 1/4 tsp salt
- 2 1/4 cups (285g) heat-treated all-purpose flour
- 2 cups (340g) semi-sweet chocolate chips
- Parchment paper & kitchen twine for wrapping (optional)
Instructions
- In a large bowl, beat softened butter and both sugars until light and fluffy, about 2–3 minutes.
- Beat in vanilla and salt until well combined.
- Gradually mix in heat-treated flour until just incorporated—do not overmix.
- Fold in chocolate chips with a spatula.
- Turn dough onto a sheet of parchment paper and shape into a 2-inch-diameter log. Roll tightly to compact, twisting ends to seal.
- Refrigerate at least 4 hours, or up to 1 week, or freeze up to 3 months.
- For cookies: Preheat oven to 350°F (175°C). Slice log into 1/2-inch thick rounds, place on baking sheet, and bake 8–9 minutes. Let cool 2 minutes before transferring.
Notes
- Heat-treat flour: Spread 2 1/4 cups flour on a baking sheet, bake at 350°F for 5 minutes, cool completely before uses.
- For edible dough safety, use pasteurized eggs or omit entirely—this recipe doesn’t require eggs.
