- 1 cup broccoli florets

- 1 cup sliced bell peppers (various colors)
- 1/2 cup sliced mushrooms
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce (optional, for added umami)
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Sesame seeds and chopped green onions for garnish
Instructions
- Prepare the vegetables by washing and chopping them; slice the carrots, bell peppers, and mushrooms, and cut the broccoli into florets.
- Cook the noodles according to the package instructions, drain, and rinse with cold water.
- Heat sesame oil in a skillet or wok over medium-high heat, add garlic and ginger, stirring for 30 seconds.
- Add broccoli, carrots, and bell peppers; stir-fry for 3-5 minutes until tender-crisp. Then add mushrooms and stir-fry for another 2-3 minutes.
- Combine the cooked noodles with the vegetables, and mix soy sauce, oyster sauce, rice vinegar, sugar, and red pepper flakes in a bowl. Pour the sauce into the pan and stir until heated through.
