Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Mix oats, cinnamon, nutmeg, baking powder, and salt in a bowl.
- In another bowl, whisk eggs, pumpkin, maple syrup, milk, and vanilla.
- Combine wet and dry ingredients and pour into the baking dish.
- Bake for 30-35 minutes until golden and set.
