- 4 large yellow onions, thinly sliced

- 4 cloves garlic, minced
- 6 cups beef broth

- 1 baguette, sliced

Instructions
- Heat olive oil in a large pot over medium heat. Add sliced onions and cook, stirring occasionally, until deeply caramelized, about 30 minutes.
- Add garlic and cook for another minute.
- Pour in beef broth, add thyme, salt, and pepper. Simmer for 20 minutes.
- Preheat broiler. Place baguette slices on a baking sheet and toast until golden.
- Ladle soup into oven-safe bowls, top with toasted baguette slices, and sprinkle with Gruyère cheese.
- Broil until cheese bubbles and is golden, about 3-5 minutes.
- Serve hot, garnished with fresh thyme if desired.
