Creamy Parmesan Spinach Mushroom Pasta Skillet

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 8 oz (225 g) pasta (penne or spaghetti)
  • 2 cups sliced mushrooms
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until browned, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Stir in heavy cream, Parmesan, salt, and pepper. Simmer until sauce thickens slightly.
  5. Add spinach and cook until wilted. Toss in cooked pasta to combine.

Notes

  • You can substitute half-and-half for heavy cream for a lighter sauce.
  • For extra flavor, sprinkle with red pepper flakes or chopped herbs.
