- 8 oz (225 g) pasta (penne or spaghetti)
- 2 cups sliced mushrooms
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add mushrooms and cook until browned, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Stir in heavy cream, Parmesan, salt, and pepper. Simmer until sauce thickens slightly.
- Add spinach and cook until wilted. Toss in cooked pasta to combine.
Notes
- You can substitute half-and-half for heavy cream for a lighter sauce.
- For extra flavor, sprinkle with red pepper flakes or chopped herbs.
