- 1 pound Italian sausage, sweet or spicy
- 1 cup chopped onion
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9-ounce) package cheese tortellini
- 1 cup heavy cream
- 1 cup chopped spinach (optional)
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the sausage in a large pot over medium heat until browned, then remove and set aside.
- Sauté chopped onion and garlic in the same pot until translucent.
- Pour in chicken broth and bring to a boil.
- Add tortellini and cooked sausage, simmer until tortellini is tender, about 8 minutes.
- Stir in heavy cream and spinach (if using), cook for 2 minutes.
- Season with salt and pepper, garnish with herbs, and serve hot.

- Feel free to add extra veggies like carrots or celery for more nutrition.
- Use milk or half-and-half as a lighter alternative to heavy cream.
