- 1 large head cauliflower, cut into florets
- 3 tablespoons vegan butter
- 3 cloves garlic, minced
- 1 cup coconut milk or almond milk
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Steam or boil cauliflower florets until tender, about 5-7 minutes.
- In a skillet, melt vegan butter over medium heat, add minced garlic and sauté for 1 minute.
- Add coconut milk and lemon juice, stirring continuously until slightly thickened.
- Add cooked cauliflower to the sauce, toss until well coated.
- Season with salt and pepper, garnish with chopped parsley, and serve warm.
Notes
For extra flavor, add a pinch of paprika or nutritional yeast. Can be served over rice or pasta for a complete meal.
