- 2 cans cannellini beans, drained and rinsed
- 4 cups chicken broth

- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro and shredded cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion and garlic until fragrant and translucent.
- Add shredded chicken, beans, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in sour cream until well combined and heated through.
- Serve hot, garnished with cilantro and cheese.
Notes
- Use cooked rotisserie chicken for convenience.
- Adjust spice levels by adding more chili powder.
