Instructions
- Begin by mashing the black beans in a large bowl until mostly smooth, leaving a few chunks for texture.
- In the bowl with the mashed beans, add in the diced red bell pepper, onion, minced garlic, breadcrumbs, chili powder, cumin, salt, black pepper, parsley, and egg. Mix thoroughly until everything is well combined.
- Shape your mixture into patties, about 1/2 inch thick, creating indentations to mimic spots.
- In a skillet, heat olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, until crispy and golden brown.
Notes
- These burgers can be paired with sweet potato fries or salads for a balanced meal.
- Store leftovers in an airtight container; they last for up to 3 days in the fridge or 3 months in the freezer.
- For a vegan option, replace the egg with a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water).
