- 4 boneless, skinless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup cranberry juice
- 8 oz Brie cheese, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh thyme for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear chicken until golden brown, about 3-4 minutes per side.
- Transfer chicken to a baking dish, top each with slices of Brie cheese.
- In a saucepan, cook cranberries and cranberry juice over medium heat until cranberries burst, about 10 minutes.
- Pour cranberry sauce over chicken in the dish.
- Bake for 20-25 minutes until chicken is cooked through and cheese is melted.
- Garnish with fresh thyme and serve hot.

- Use fresh cranberries for the best flavor.
- Pinch of red pepper flakes can add a mild heat.
- Serve with roasted vegetables or mashed potatoes.
