Ingredients
Scale
- 4 cups all-purpose flour
- 1 ½ cups warm water (105-115°F)
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 packet (2 ¼ teaspoons) active dry yeast
- ¼ cup baking soda
- 8 cups water
- Coarse pretzel salt, for topping
- Melted butter, for brushing
Instructions
- In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until the yeast is foamy. Add the flour and salt, mixing until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour.
- Preheat your oven to 450°F (232°C) and line baking sheets with parchment paper. Punch down the dough, divide it into pieces, and roll each piece into a rope about ½ inch thick. Cut into 1-inch pieces.
- In a large pot, bring 8 cups of water to a boil, then add the baking soda. Boil pretzel bites for 30-60 seconds per batch, then remove and place on baking sheets. Sprinkle with coarse salt and bake for 12-15 minutes until golden brown. Brush with melted butter after baking.
Notes
- Ensure the yeast is active by checking for foam after mixing with warm water and sugar.
- Don’t overcrowd the pot when boiling the pretzel bites to ensure even cooking.
- For a deeper color and flavor, add a tablespoon of molasses to the dough.
- Experiment with different seasonings for a unique twist on this pretzel bites recipe.
