Ingredients
Scale
- 1 cup green fruit juice (apple, lime, or kiwi) – for vibrant flavor and color
- 3 tablespoons gelatin powder
- 2 tablespoons honey or corn syrup
- 1 teaspoon lemon juice (optional, for brightness)
- Green food coloring (if needed to intensify color)
- Silicone gem molds or silicone ice cube trays
- Non-stick spray or vegetable oil (to prevent sticking)
Instructions
- Prepare the mold: Lightly spray silicone gem molds or ice trays with non-stick spray.
- Mix ingredients: In a small saucepan, pour green fruit juice and sprinkle gelatin evenly. Let sit for 5 minutes to bloom.
- Cook mixture: Over low heat, stir constantly until gelatin dissolves (~3-4 minutes). Add honey or corn syrup, lemon juice, and green food coloring if desired. Mix until smooth.
- Pour into molds: Carefully pour the gelatin mixture into molds using a pipette or small jug. Tap to remove air bubbles.
- Chill: Refrigerate for at least 2 hours or until set.
- Remove and enjoy: Pop the Gummy Gems out of molds and store in an airtight container.
Notes
- Ensure molds are lightly greased for easy removal.
- You can customize the color intensity with more or less food coloring.
- Store in an airtight container at room temperature for up to a week or refrigerated for 2-3 weeks.
- For vegan options, substitute gelatin with agar-agar or pectin.
