- 200g sliced beef or chicken
- 1 cup sliced mushrooms
- 1 cup chopped bok choy
- 1 cup sliced carrots
- 200g udon noodles
- 2 green onions, sliced
- Chili oil (optional)
Instructions
- Bring chicken broth, coconut milk, and miso paste to a boil in a large pot.
- Add sliced meats and cook until tender.
- Stir in vegetables and cook for 5 minutes.
- Cook udon noodles separately according to package instructions, then add to the hotpot.
- Garnish with green onions and chili oil if desired, serve hot.
