Instructions
- Mix crushed digestive biscuits with melted butter and press into the base of a greased springform pan to form crust.
- Preheat oven to 160°C (320°F).
- Beat cream cheese and sugar until smooth. Add sour cream, matcha powder, and vanilla, mixing well.
- Add eggs one at a time, mixing after each addition.
- Pour filling over crust and bake for 50-60 minutes until set and slightly golden around edges.
- Cool completely, then refrigerate for at least 4 hours or overnight before serving.
