Instructions
- Combine sugar, corn syrup, and water in a heavy saucepan. Bring to a boil over medium heat, stirring constantly.
- Attach a candy thermometer; cook until the mixture reaches 320°F (160°C).
- Remove from heat and stir in vanilla and food coloring.
- Quickly pour mixture into a fine-mesh sieve or pour from a pitcher to spin into cotton candy using a cotton candy machine or by hand with a paper cone.
