- 3 ½ cups (420g) all-purpose flour
- ¼ cup (50g) granulated sugar
- 1 ½ tsp instant yeast
- ¾ tsp salt
- ½ cup (120ml) warm milk (110°F/43°C)
- 2 tbsp (30g) unsalted butter, melted
- 1 large egg
- 3 tbsp (45g) unsalted butter, softened (for filling)
- ¼ cup (50g) brown sugar
- 2 tsp ground cinnamon
- ½ tsp ground cardamom
- ¼ tsp smoked paprika
- Pinch of saffron threads, crushed
- Pinch of red food-grade iron oxide or beet powder (for Melange red hue)
Instructions
- Data warm milk, melted butter, and egg in a bowl. Whisk in flour, sugar, yeast, and salt until a soft dough forms. Knead 5–7 minutes until smooth. Cover, let rise 1 hour or until doubled.
- Punch down dough. Roll out on floured surface into 18×12-inch rectangle.
- Mix brown sugar, cinnamon, cardamom, smoked paprika, saffron, and pinch of red pigment. Spread softened butter over dough, then sprinkle spice mixture evenly. Roll tightly into log, seal seam. Chill 15 min.
- Preheat oven to 350°F (175°C). Grease 9×9-inch pan. Slice log into 12 rolls, place in pan.
- Bake 22–27 min until golden brown and internal temp reaches 190°F (88°C).
- Cool 10 min. Drizzle with red glaze (powdered sugar + water + red pigment) before serving.
Notes
- For accurate Melange color, use food-grade iron oxide (safe for consumption) or natural beet powder for red tones.
- Saffron adds authenticity—but a pinch of turmeric can substitute if unavailable (adds golden warmth).
- Best served warm, with a ‘blue water’ sip to honor Fremen tradition.
