- 1 lb (450g) elbow macaroni or pasta of choice
- 1 lb (450g) cooked chicken, shredded or sliced
- 1 cup heavy cream
- 1 can (14 oz) diced tomatoes
- 2 tablespoons Cajun seasoning
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Add pasta, chicken, tomatoes, Cajun seasoning, onion, garlic, bell peppers, olive oil, salt, and pepper into the slow cooker.
- Pour in heavy cream and stir to combine all ingredients.
- Cook on low for 4 hours, stirring occasionally.
- Serve hot, garnished with fresh herbs if desired.
Notes
- Adjust Cajun seasoning for spice preference.
- Use cooked leftover chicken to save time.
- Can be made vegetarian by omitting chicken and adding vegetables.
