- 1 lb Italian sausage, casings removed
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 (9 oz) package cheese tortellini
- 1 can diced tomatoes
- 1 cup spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook Italian sausage over medium heat until browned, about 5-7 minutes. Remove excess fat.
- Add chopped onion and garlic, cook until softened, about 3 minutes.
- Pour in chicken broth and diced tomatoes, bring to a boil.
- Reduce heat and add tortellini, cook until tender, about 3 minutes.
- Stir in spinach and Italian seasoning, cook until wilted, about 1 minute.
- Season with salt and pepper, then serve hot.
Notes
- Adjust the amount of Italian seasoning for more or less flavor.
- Use spicy sausage for added heat.
- Serve with crusty bread for a complete meal.
