Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup beef broth
  • 2 tbsp cornstarch

  • 4 large potatoes, peeled and chopped
  • 1/4 cup butter
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, bread crumbs, Parmesan, egg, minced garlic, thyme, salt, and pepper. Mix well.
  3. Form mixture into 12-14 meatballs.
  4. In a skillet, heat olive oil over medium heat. Brown meatballs on all sides, then transfer to a baking dish.
  5. Pour beef broth over meatballs. Bake in preheated oven for 20-25 minutes or until cooked through.

  2. Drain and mash potatoes with butter, milk, minced garlic, salt, and pepper. Stir in chopped parsley.
