- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup beef broth
- 2 tbsp cornstarch
- 4 large potatoes, peeled and chopped
- 1/4 cup butter
- 1/4 cup milk
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine ground beef, bread crumbs, Parmesan, egg, minced garlic, thyme, salt, and pepper. Mix well.
- Form mixture into 12-14 meatballs.
- In a skillet, heat olive oil over medium heat. Brown meatballs on all sides, then transfer to a baking dish.
- Pour beef broth over meatballs. Bake in preheated oven for 20-25 minutes or until cooked through.
- Meanwhile, cook potatoes in salted water until tender, about 15 minutes.
- Drain and mash potatoes with butter, milk, minced garlic, salt, and pepper. Stir in chopped parsley.
Notes
- For extra flavor, add a splash of Worcestershire sauce to the meat mixture.
- Serve meatballs with mashed potatoes and gravy spooned over the top.
