- 4 large bell peppers (red, yellow, green)
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or mozzarella)

- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut tops off bell peppers and remove seeds. Place peppers in baking dish.
- Cook ground beef with diced onion and garlic until browned. Drain excess fat.
- Add cooked rice, diced tomatoes, Italian seasoning, salt, and pepper to beef mixture. Mix well.
- Stuff peppers with beef and rice mixture. Top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted and bubbly.
- Garnish with chopped parsley and serve hot.

- You can substitute ground turkey or chicken for beef.
- For a vegetarian option, use beans or lentils instead of meat.
- Use different cheeses for variety, like pepper jack or feta.
